Dr Folu Olatona on ‘Your View’ at TVC speaking on Safe Methods of Preserving Beans

Beans can be enjoyed without flatulence if you soak it for about 8-12 hours, remove the water and cook with fresh water. The gas that disturbs people when they eat beans would have been released into the water and discarded.  You can also add baking soda to quicken the breakdown of the pectin in the beans. You can even allow it to soak for two days like grains and enjoy more health benefits from the fermented version.

The best way to reduce the gas from beans is to eat beans more frequently to produce more bacteria that digest beans in your body. People who eat beans regularly are able to digest them better. I eat beans in different forms every day and don’t experience gas any more.

Concerning preservation at the industrial level, certain mild chemicals are used by experts under safe conditions to preserve beans in such a way that its residue would not be more than 0.01mg/kg. Unfortunately, some poor ignorant people use stronger chemicals in excessive amount (dangerous to health) and this has put the fear of eating beans in many people.

Don’t be afraid of eating beans. You can detect if there is excess chemical residue in it. Check the beans before buying it. It seems there is powder in it or it smells in a strange way, don’t buy it. If you have bought beans but you doubt its safety, pour it in a bowl of water and stir for some seconds. If you see an oily film on the water, that means there is chemical and you should discard the beans.

Concerning storing beans at home, the first step is to avoid keeping a large amount of beans. Buy small quantities, add Cameroun or red pepper to it and keep in airtight containers.  You can also keep it in airtight containers in a freezer.
